About this place
Situated on the 2nd floor of Ginza INZ 2 in Ginza Nishi 2-chome, Ippudo Ginza inzu-ten is a convenient ramen stop during a shopping outing or on the way home from work. Diners buy a ticket from the machine out front before taking a seat, and the counter seating makes solo dining straightforward.
Distinctive Broths: Shiromaru and Akamaru
The signature Shiromaru Motoaji is the house benchmark: thin noodles in a mellow, rich pork-bone broth, finished with tender chashu pork and wood-ear mushroom. It can be tailored with various topping configurations, including the fully loaded Kiwami Shiromaru Motoaji—topped with a soft-boiled salted egg, nori seaweed, and cuts of both loin and belly chashu—as well as the generously portioned Bari-Mori. Akamaru Shinaji takes another direction, layering garlic-fragrant oil and spicy miso paste into the deep broth for a punchier, robust profile.
Self-Serve Condiments and Side Dishes
A self-service area in the shop supplies spicy seasoned bean sprouts, pickled mustard greens (takana), and red pickled ginger. Grazing on spicy sprouts between bites or stirring red ginger into the broth later in the bowl allows you to adjust the flavors as you go. For a heartier meal, diners can add rice bowls such as chashu mabushi rice topped with sweet-and-savory glazed pork or spicy cod roe mentaiko rice, or opt for plump boiled gyoza with springy wrappers.
Draft beer and highballs are on hand, making it easy to enjoy a small plate and a drink while waiting for your ramen to arrive. Extra noodle orders—either a full kaedama or a half-sized ko-dama—allow you to savor the interplay of broth and condiments right down to the final drop.
